The Loop That Already Worked
Alys Beach's Town Center has run on a fairly reliable rhythm for years. Mornings belong to Charlie's Delights, which opens at 6:30am and sells its top item, a Sour Cream Donut, until the case is empty, sometimes before 10. Fonville Press picks up the rest of the day, open 7am to 8pm with chefs Coleman Jernigan and Josh Rockhill running a menu that ranges from Brisket Biscuits to Frozen Acai Bowls. Raw & Juicy, which relocated from its old Seaside spot, handles the health-conscious crowd with organic smoothies and juices, plus a small outdoor bar for cocktails later in the day.
Once the sun starts angling toward the Gulf, the loop shifts to full-service. Chef Dakota Watson runs a kitchen centered on a wood-fired oven and handmade pasta, with a dinner menu that includes Snapper Tartare, Tuna Crudo, Corn and Crab Triangoli, and a Lamb Pizza. Brunch runs Friday through Sunday from 11am to 2:30pm, with steak and eggs and a breakfast pizza alongside the regular pasta and pizza menu for anyone who'd rather skip eggs entirely. Handcrafted ceiling beams, warm wood flooring and woven rattan sit against porcelain light fixtures, with a chef's counter wrapped in deep indigo tile and booth seating framed by hand-painted blue-and-white tiles. The patio looks out over the Town Center lawn, the same green space where the rest of the block's evening foot traffic already gathers.
Steve Palmer, founder of The Indigo Road Hospitality Group, said the response since opening has made the expansion worth it, noting that "the warmth and support we've received from the community has been both meaningful and rewarding." Here's the part worth sitting with: the same hospitality group has operated in this exact block since 2024, and it took a second restaurant, opened two years later, to actually staff the hour that the first one skipped. O-Ku's hours, dinner daily from 4pm, weekend lunch at 11, leave the same 2:30-to-4 stretch dark that George's, Caliza and Fonville Press all leave dark in their own ways. Nobody built for that window until Indaco did, and even then, only on the three days a week when Town Center foot traffic is heaviest to begin with.
That timing isn't incidental. Friday through Sunday is when the beach crowd actually funnels back toward the Town Center in the early-to-mid afternoon, showered off and looking for something between a snack and a seated dinner. Indaco's Aperitivo Hour lands squarely in that window, which means it's less a novelty and more a bet that the group's own earlier restaurant left money, and hungry customers, on the table.
